Our FIRST-EVER production beer release May 2022!!! YAY!!!

Foehn winds, or in German, Föhn, is a warm and dry, gusty wind that periodically descends the leeward slopes of nearly all mountains and mountain ranges. In Southwest Alberta, we call a Föhn a Chinook!

While studying for the Certified Cicerone exam, the Munich Helles was a beer style that stood out as a favourite. A trip to Munich, Germany, reaffirmed our love for this beer style.

We used all Alberta malt from our friends at Canada Malting and Red Shed Malting for the malty backbone of this tasty German Helles-style lager. A late addition of German Hersbrucker provides the subtle spicy, floral, fruity hop character. The German yeast contributes to the clean fermentation profile.

Our Helles is medium-bodied and has a clean, smooth, mildly grainy-sweet malty flavour and a soft, low bitterness finish. Because the Helles is such an enjoyable and refreshing beer, it will quickly become your everyday go-to brew.

Want to pair this beer with food? Due to the maltiness of this beer, it pairs really well with a pizza. German food such as bratwurst and sauerkraut is a good pairing. A Reuben, bacon, ham, and pretzels all are good choices. Fish such as flounder, sole, crab, and shrimp can also play well. Cheeses such as Chevre, Mozzarella, Brie, Gouda, Cotija, and mild Swiss all pair well with our Munich Helles.

In 2024, we donated $1 for every four pack sold of our Adaptable Outdoors batch, which totalled $500 going back to Adaptable Outdoors - a federally registered charity incorporated in Alberta and based in Pincher Creek that believes outdoor adventure should be for everyone. They currently offer Adaptive Hiking, Adaptive Paddling and Adaptive Fishing programs from shore, kayak or canoe. They have various adaptive equipment that helps them make these activities accessible to people of all abilities.

A Zephyr is a gentle breeze from the west. The prevailing winds in Belgium are southern to westerly winds. Westerly winds are predominant from April 30 to September 23. The timing of this beer release aligns with the gentle westerly breezes in Belgium.

Our Zephyr - Table Saison is an unfiltered, pale, refreshing, effervescent low strength Belgian ale with a very dry finish. The beer has medium fruity and spicy flavours, supported by a medium soft malt character, with some grainy flavours and malty complexity. The hops play a minimal role adding bitterness to balance the malty sweetness and some earthy, herbal notes.

We LOVE Belgian beers! The yeast character is the shining star in this beer style. The yeast provides all of the fantastic esters, including orange, apple, lemon, pear and the baking spice characteristics, including pepper, clove, and nutmeg. We haven't added any additional spices or herbs; this is all derived from the yeast.

Want to pair this beer with food? A prawn or vegetarian Pad Thai is ideal with its earthy notes of vegetables and spices, such as lemongrass, ginger and fresh coriander. The nice carbonation and acidic touch of the beer, instead, counterbalance the sweetness of the prawns, the umami of the soy sauce and the richness of the coconut milk. Pairing with sushi and sashimi accompanied by marinated ginger, which creates a nice taste connection. Saisons with a deep yellow colour, such as Zephyr, can be paired with roast chicken, duck or even pork, providing that the meat is cooked with aromatic herbs such as thyme, sage, garlic and rosemary, or with a beef steak served with chimichurri.

On January 10, 1962, the Town of Pincher Creek experienced a "Snow Eater," also known as a Chinook wind. The town holds the national record for one of the most extreme temperature changes in a single day! The temperature rose from a chilly -19°C to a summery 22°C in just one hour.

The Snow Eater - Stout is a medium-bodied black beer with a pronounced roasted flavour, with notes of coffee and dark chocolate with some malty complexity. It has a smooth mouthfeel from adding Canada Malting's flaked oats and Red Shed Malting's Penhold wheat. The hop aroma is low, and the beer finishes dry. The malt character dominates this beer style. We used an English Ale yeast that provides notes of jam but showcases the beer's malty character. It is jet black with a tan head. The beer's colour is calculated to be 41 SRM, just like the 41°C temperature change! Standard Reference Method (SRM) is the method for colour assessment of wort or beer.

Want to pair it with food? With tonnes of chocolate, coffee, and malt, dark stout beers go beautifully with rich foods. Try pairing it with roasted, smoked, barbecued, grilled or salty foods. Good pairing options include oysters, rich stews, braised dishes, chocolate, and sweet desserts.

Wind Warning - NEIPA

Southern Alberta is one of the windiest regions in Canada. Second, only to St. John’s, where Tim and I are from, Lethbridge gets more days with strong winds than any city in Canada, while Calgary – famous for its Chinooks – is the windiest large city in Canada. In November of 2011, some of the most powerful winds ever recorded in the area ripped across southern Alberta. The super-charged Chinook broke records for high temperatures, but the near hurricane-strength winds were even more pronounced, clocking in at 204 km/h in Pincher Creek. This calls for a Wind Warning!

Our Wind Warning - NEIPA has intense tropical fruit and citrus flavours and aromas, a soft body, a smooth mouthfeel, and is super hazy. The Enigma® Hops are juicy with red fruits like raspberries and red currants, but what sets it apart from other varieties are the white wine notes that is most often described as crisp and refreshing "Pinot Gris". The Galaxy® hops are prized for their big aromas of peach, guava, and oranges. The mouthfeel is pillowy soft and well-balanced with the hop bitterness. It is an easy-drinking, refreshing beer that is a great introduction to the world of IPAs.

Windflower - Belgian Blond

The Prairie Crocus is abundantly found in Southern Alberta and it’s Latin name is Anemone patens. The genus name Anemone comes from the Greek word for “wind.” Anemone plants are known as windflowers because it was believed that they blossomed only when the wind blew in springtime.

Our Windflower - Belgian Blond has a pleasantly subtle citrusy-spicy yeast complexity, smooth, malty palate, and dry, soft finish. The malt backbone is moderately grainy-sweet. Faint, honey-like sweetness on the palate. Medium bitterness, with the malt slightly more prominent in the balance. Light alcohol warming. Moderate yeast profile with orange and lemon esters and slight spicy-peppery-clove phenols. It is dangerously crushable at over 7%.

This beer has a bold character that complements the flavours of grilled fish without overpowering them. It pairs particularly well with fish dishes that have a sauce made with fresh coriander, lemon, ginger, or thyme. If you're looking for a perfect match for our Belgian Blond, try serving it with Asian spring rolls. The aromatic vegetables in the rolls combine perfectly with the citrusy and spicy notes of the beer. For a South American twist, pair your favourite fish ceviche with our Blonde Ale. The spicy touch of the yeasts in the beer creates a nice contrast with the acidity of the marinade, while the malty sweetness of the beer balances out the dish. Thanks to their bold yet not invasive character, these beers also go well with grilled fish, especially if served with a sauce with fresh coriander, lemon, ginger or thyme. Asian spring rolls are great companions for our Blond Ales: the aromatic vegetables perfectly combine with the citrusy and spicy notes of the beer. South American fish ceviche, served with fresh coriander and lime, goes perfectly well with the spicy touch of the yeasts. The pairing also creates a nice contrast between the malty sweetness of the beer and the acidity of the marinade.

This special Pink Boots edition is brewed with the Pink Boots hop blend, where $3 per pound sold will be donated to the Pink Boots Society scholarship fund. Our friends from Red Shed Malting and Hogarth Malt have also donated some of their malt sales to Pink Boots. Portions of our beer sales for this beer will also be donated to the Pink Boots Society. Pink Boots Society was established to assist, inspire, encourage, and are dedicated to advancing women and non-binary folks in the fermented alcoholic beverage profession through education. We donated $1 for every four pack sold, which totalled $850 going back to Pink Boots Canada in 2023.
